AT ALL TIMES, INCLUDING WHILE BEING STORED, PREPARED, DISPLAYED, SERVED, OR TRANSPORTED, FOOD SHALL BE PROTECTED FROM POTENTIAL CONTAMINATION, INCLUDING DUST, INSECTS, RODENTS, UNCLEAN EQUIPMENT AND UTENSILS, UNNECESSARY HANDLING, COUGHS AND SNEEZES, FLOODING, DRAINAGE, AND OVERHEAD LEAKAGE OR OVERHEAD DRIPPAGE FROM CONDENSATION. FURTHERMORE, DUE TO THE DIFFERENT PATHOGENS AND COOKING TEMPERATURES ASSOCIATED WITH DIFFERENT SPECIES OF MEAT, SEPARATE RAW MEATS PRODUCTS. IMMEDIATE/ONSITE
*20  OBSERVED THE SANITIZER BUCKET AT THE MEAT SLICER STATION WITHIN THE DELI DEPARTMENT TO BE TOO WEAK (<200 PPM OF AVAILABLE QUAT). PROVIDE FOR THE SANITIZER SOLUTION TO BE MIXED TO THE APPROPRIATE LEVEL FOR THE TYPE OF SANITIZER BEING USED--FOR A QUAT SOLUTION, THERE SHALL BE AT LEAST 200 PPM OF AVAILABLE QUAT IN THE SOLUTION [750.830]. IMMEDIATE/ONSITE
*28  THERE IS ADHESIVE TAPE AROUND THE BACK-FLOW PREVENTER INSTALLED AT THE MOP SINK NEAR THE DELI/PRODUCE STORAGE ROOM, INDICATING THAT IT NEEDS REPAIR. REPAIR AND ENSURE THAT THE PLUMBING IS INTALLED ACCORDING TO CODE. THE HOSE ATTACHMENT SHALL BE REMOVED UNTIL THE FAUCET IS REPAIRED [750.1100]. 5 DAYS
*41  WITHIN THE PRODUCE/DELI DRY STORAGE AREA, I OBSERVED CHEMICALS STORED ON AND ABOVE THE CUTTING BOARDS AND WEIGH STATION. PROVIDE FOR ALL FOOD, EQUIPMENT, UTENSILS, AND SINGLE SERVICE ARTICLES TO BE STORED EITHER ABOVE OR COMPLETELY SEPARATE FOR ALL TOXIC CHEMICALS [750.1310]. IMMEDIATE/ONSITE
OBSERVED NO THERMOMETER WITHIN THE DELI/PRODUCE COOLER. IN ADDITION, THE INTERNAL THERMOMETER WITHIN THE WARMING DISPLAY CASE HAS MALFUNCTIONED. PROVIDE FOR AN ACCURATE, CONSPICUOUS THERMOMETER, THAT IS ACCURATE WITHIN +/- 3°F, TO BE AVAILABLE IN ALL UNITS HOLDING POTENTIALLY HAZARDOUS FOODS [750.140]. NEXT INSPECTION
AT THE DELI DEPARTMENT I OBSERVED A PACKET OF MAC AND CHEESE TO BE IMPROPERLY THAWED. PROVIDE FOR ALL POTENTIALLY HAZARDOUS FOODS TO BE PROPERLY THAWED IN ONE OF THE FOLLOWING WAYS: (1) IN A REFRIGERATOR UNIT IN A WAY THAT THE TEMPERATURE DOE NOT EXCEED 41°F, (2) UNDER POTABLE RUNNING WATER AT A TEMPERATURE OF 70°F OR BELOW, (3) IN A MICROWAVE OVEN ONLY WHEN IT IS A PART OF THE COOKING PROCESS, OR(4) AS A PART OF THE CONVENTIONAL COOKING PROCESS [750.240]. NEXT INSPECTION

PROVIDE FOR ALL UTENSILS TO BE STORED IN ONE OF THE FOLLOWING MANNERS: (1) IN A CLEAN AND DRY CONTAINER, (2) IN THE FOOD PRODUCT WITH THE HANDLE UP AND OUT OF THE FOOD PRODUCT, OR (3) IN A DIPPER WELL, USING POTABLE WATER [750.280].
